Dry-cured in salt and smoked over whisky barrel chips and oak, our much acclaimed Smoked Wild Scottish Salmon has a delicate texture with a subtle, intense flavour. The Guild of Fine Food Retailers awarded our wild salmon the gold medal four times at their Great Taste Awards since 2000 and in 2011 a three star Gold Medal – the highest award ever given to a UK produced smoked salmon!

Our wild salmon is sourced in small quantities from licensed nets on both the west and east coast of Scotland. Each salmon is individually cured for up to twenty hours by hand using a light salt cure.
It is then smoked gently over whisky barrel chips and oak dust for another twenty hours before being chilled for a minimum of 1 day to complete the maturing process.
