hot smoked salmon

Our salmon is initially cold-smoked and then heated (with additional smoke) for one hour at high temperature. The salmon is now flaky in texture, but remaining moist and richer in flavour than cold smoked salmon. Wonderful when accompanied with small buttered new potatoes, a peppery salad and a touch of creme fraiche with horseradish sauce.
