wild smoked salmon

We source our wild salmon in modest quantities from commercial nets on the west coast of Scotland. The salmon is individually cured by hand using a light salt cure. The cured salmon is then smoked gently for up to 18 hours using a combination of oak dust and whisky barrel chippings. After smoking the finished product in chilled for a minimum of 2 days to complete the maturing process. Treat yourself to a special dining experience or why not send some as a gift?
