Smoking Services for Anglers

Smoking some of your own salmon or trout catch is the ideal way to extend the pleasure of fishing in Scotland. We provide a specialist smoking service. Each fish is individually labelled and processed according to our customer's instructions.
Smoked Salmon can be delivered overnight to UK mainland addresses and express to other UK and overseas addresses. Allow 7-10 days for smoking, slicing and packing.
We are located in the centre of Dunkeld (see map below), just off the A9 Perth to Inverness road.

Tuesday to Saturday 9.30am-4pm
April to November we are also open on Sundays 9.30am-4pm

Smoked Salmon
Your salmon will be dry-cured in salt and smoked in small kilns using a combination of whisky barrel chips and oak. It will then be trimmed and vacuum packed according to your instructions.

£15 per fish plus £1.40 per kilo 

Unsliced quarters, sixths

£15 per fish plus £1.75 per kilo

Sliced sides

£15 per fish plus £2.25 per kilo 

Sliced packs 400g

£15 per fish plus £2.50 per kilo

Sliced packs 200g

£15 per fish plus £2.75 per kilo


Gravadlax
Salmon fillets are cured for five days in a mixture of dill, sugar, salt and pepper and then vacuum packed.

Trout
We also are able to smoke anglers trout in hot or cold smoked format


Yields
Yields vary considerably, especially late in the season. The best quality smoked salmon is achieved with silver fish with sliced yields of around 40%, poorer quality fish will be much lower. We fully endose 'catch and release' policies on the various river sytems that help to maintain healthy salmon stocks in our fragile river environment. We reserve the right not to accept fish in poor condition.
